Jeffrey M. Pilcher has been a leading figure in the emerging scholarly field of food history. From an early focus on Mexico and Latin America, he has expanded the scope of his research to food in world history. His books include ¡Que vivan los tamales! Food and the Making of Mexican Identity (1998), The Sausage Rebellion: Public Health, Private Enterprise, and Meat in Mexico City (2006), Food in World History (2006), The Oxford Handbook of Food History (2012), and Planet Taco: A Global History of Mexican Food (2012). The articles editor for Global Food History and a member of the editorial board of Gastronomica, he currently holds the position of Professor of Food History at the University of Toronto, the first such dedicated line in a North American university.
